One of my favorite dishes to make is spaghetti carbonara. Here is the recipe:

Ingredients:

1 lb spaghetti1/2 lb pancetta, diced2 cloves of garlic, minced2 large eggs1 cup grated Pecorino Romano cheeseSalt and black pepper, to tasteChopped fresh parsley, for garnish

Instructions:

Cook the spaghetti in a large pot of salted boiling water until al dente. Drain and set aside, reserving 1 cup of pasta water.In a large skillet, cook the pancetta over medium heat until crispy. Add the garlic and cook for another minute.In a bowl, whisk together the eggs, Pecorino Romano cheese, salt, and pepper.Add the cooked spaghetti to the skillet with the pancetta and garlic. Toss to combine.Remove the skillet from the heat and quickly stir in the egg mixture, adding a little pasta water if needed to create a creamy sauce.Serve the spaghetti carbonara hot, garnished with chopped parsley and extra grated cheese.
