Recipe: Spaghetti Aglio e Olio

Ingredients:

1/2 pound spaghetti4 cloves of garlic, thinly sliced1/2 teaspoon red pepper flakes1/3 cup extra virgin olive oilSalt and pepper to tasteGrated Parmesan cheese (optional)Fresh parsley, chopped (optional)

Instructions:

Cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of the pasta water before draining.In a large skillet, heat the olive oil over medium heat. Add the garlic and red pepper flakes and cook until the garlic is golden brown and fragrant, about 2-3 minutes.Add the cooked spaghetti to the skillet and toss to coat in the garlic-infused oil. If the pasta seems dry, add some of the reserved pasta water to loosen it up.Season the spaghetti with salt and pepper to taste.Serve the spaghetti Aglio e Olio hot, garnished with grated Parmesan cheese and chopped parsley if desired.
