Recipe for Potato Soup:

Ingredients:

4 potatoes, peeled and diced1 onion, diced2 cloves of garlic, minced4 cups of vegetable broth1 cup of milkSalt and pepper to tasteOptional toppings: shredded cheese, crispy bacon, chopped green onions

Instructions:

In a large pot, heat some oil over medium heat. Add the diced onion and minced garlic, and cook until softened.Add the diced potatoes to the pot and pour in the vegetable broth. Bring to a boil, then reduce heat and simmer for about 15 minutes or until the potatoes are fork-tender.Using a potato masher or immersion blender, mash or blend the potatoes until smooth but still slightly chunky.Stir in the milk and season with salt and pepper to taste. Cook for an additional 5 minutes.If desired, top with shredded cheese, crispy bacon, and chopped green onions before serving.
